my moms easy beef and mac casserole

This was a staple in our house since we were quite poor. My mom and dad had to come up with different dishes that weren't very expensive to make, yet were filling and flavorful. Always loved it. Now, I make it with ground turkey to make it healthier, but it tastes just as good:-)

Ingredients

  • 1 cup macaroni
  • 1/2 cup macaroni
  • 2 pounds lean ground beef or ground turkey
  • 1 - onion, chopped
  • 1 teaspoon minced garlic
  • 1/2 teaspoon salt
  • 1 teaspoon worcestershire sauce
  • 1 dash tobasco sauce
  • 2 - 8 oz cans diced tomatoes
  • 1 can condensed tomato soup
  • 1 cup cheddar cheese, cubed

  • Step 1
    Heat oven to 350. Lightly spray a 3-quart casserole dish w/ cooking spray. Cook macaroni as directed, drain. Spray a lg skillet w/ cooking spray.
  • Step 2
    Place pan over med-high heat, cook beef, onion and garlic until beef is fully browned. Add salt, worcestershire sauce, tobasco sauce, tomatoes and tomato soup, stir well.
  • Step 3
    Pour into pan w/ macaroni, stir. Spoon into casserole dish. Sprinkle w/ cheese cubes. Cover, bake 30 mins. Uncover, bake 20 mins more.
