This is a healthy revamp of Mac and Cheese

2 1/2 c
1% milk
1/4 c
all purpose flour
1/2 tsp
each dry mustard and salt
1/4 tsp
each paprika and black pepper
1 1/2 c
shredded reduced fat sharp cheddar cheese
2 oz
light cream cheese
1/4 c
minced onions
3 Tbsp
parmesan cheese
6 c
cooked elbow macaroni, you can use whole wheat


1/4 c
unseasoned dry bread crumbs
1 Tbsp
parmesan cheese


1In a medium saucepan, combine the milk and flour until smooth. Cook over medium high heat until mixture is bubbly and thickened, about 7-8 minutes.
2Stir in dry mustard, salt, paprika, pepper, all cheeses, and onions. Continue to cook until cheeses are completely melted.
3Combine cheese sauce with cooked macaroni. Transfer to a large casserole dish that has been sprayed with non stick spray.
4Mix bread crumbs and parmesan cheese. Sprinkle over macaroni. Bake at 350, uncovered, for 30 minutes. Serve immediately.
