This is a healthy revamp of Mac and Cheese

Ingredients

  • 2 1/2 cups 1% milk
  • 1/4 cup all purpose flour
  • 1/2 teaspoon each dry mustard and salt
  • 1/4 teaspoon each paprika and black pepper
  • 1 1/2 cups shredded reduced fat sharp cheddar cheese
  • 2 ounces light cream cheese
  • 1/4 cup minced onions
  • 3 tablespoons parmesan cheese
  • 6 cups cooked elbow macaroni, you can use whole wheat
  • TOPPING
  • 1/4 cup unseasoned dry bread crumbs
  • 1 tablespoon parmesan cheese

How To Make mac attack

  • Step 1
    In a medium saucepan, combine the milk and flour until smooth. Cook over medium high heat until mixture is bubbly and thickened, about 7-8 minutes.
  • Step 2
    Stir in dry mustard, salt, paprika, pepper, all cheeses, and onions. Continue to cook until cheeses are completely melted.
  • Step 3
    Combine cheese sauce with cooked macaroni. Transfer to a large casserole dish that has been sprayed with non stick spray.
  • Step 4
    Mix bread crumbs and parmesan cheese. Sprinkle over macaroni. Bake at 350, uncovered, for 30 minutes. Serve immediately.
