lea's vegetable spaghetti

Since I became vegetarian,this is a dish I like to make often using leftover vegetables,it's quick to make,delicious and very filling. Use as many vegetables as you want, I use more mushrooms and zucchini than any other vegetables as those are my favorites. I sometimes add a can of tomatoes as well.You can use a car of marinara sauce that would be even quicker!

Ingredients

  • - olive oil
  • - garlic,minced
  • - crushed red pepper flakes
  • - anchovies.mashed
  • - zucchini,sliced
  • - eggplant,thinly sliced
  • - mushrooms,cut in quarters
  • - onions,sliced
  • - tomato sauce
  • - dried oregano
  • - fresh basil,broken into small pieces
  • - salt and pepper,to taste
  • - spaghetti,or any pasta
  • - parmesan cheese,freshly grated

How To Make lea's vegetable spaghetti

  • Step 1
    In a large skillet,slowly heat olive oil,garlic and anchovies. Add vegetables and sauté until just tender.Add tomato sauce,spices to taste and small amount of water,heat through. Cook pasta according to package directions. Top with cheese.
