Ingredients

  • 1 lb
    spaghetti
  • 3 Tbsp
    olive oil
  • 1 large
    zucchini, washed
  • 1/2 c
    basil leaves, cut into ribbons
  • 1/2 lb
    low-fat ricotta cheese

How to Make Creamy spaghetti w/ zucchini

Step-by-Step

  1. Cook pasta as directed, reserve 1/4 cup water, drain remaining water, replace pasta into pot. Using a shredder, shred zucchini. Heat oil in lg skillet over medium heat.
  2. Add zucchini and a pinch of salt. Stir to coat w/ oil. Cook, stirring for 4 mins. Add spaghetti and ricotta to skillet. Toss gently to combine.
  3. If it is too sticky, add a little of the reserved water. Season w/ salt and pepper.
