A wonderfully light spaghetti dish w/ spring zucchini.

Ingredients

  • 1 pound spaghetti
  • 3 tablespoons olive oil
  • 1 large zucchini, washed
  • 1/2 cup basil leaves, cut into ribbons
  • 1/2 pound low-fat ricotta cheese

How To Make creamy spaghetti w/ zucchini

  • Step 1
    Cook pasta as directed, reserve 1/4 cup water, drain remaining water, replace pasta into pot. Using a shredder, shred zucchini. Heat oil in lg skillet over medium heat.
  • Step 2
    Add zucchini and a pinch of salt. Stir to coat w/ oil. Cook, stirring for 4 mins. Add spaghetti and ricotta to skillet. Toss gently to combine.
  • Step 3
    If it is too sticky, add a little of the reserved water. Season w/ salt and pepper.
