clams vinaigrette over pasta
Another of my husband's "spur of the moment, see what we have in the pantry" recipes! I love how he can do that. LOL This is quick, easy & delicious!

Ingredients
- 6 ounces jar of roasted red peppers
- 1/2 - 1 pounds whole wheat thin spaghetti (or pasta of choice)
- 6 1/2 ounces canned clams in juice
- 1 small onion, chopped
- 1/4 cup romano basil vinaigrette (wish bone brand)
- 1/4 cup olive oil, extra virgin (a little more if needed)
How To Make clams vinaigrette over pasta

Step 1In a large pot, cook spaghetti until done, according to directions on box

Step 2Meanwhile, in saute pan, cook onions & red peppers until tender in a little olive oil.

Step 3Add in olive oil, clams with juice & vinaigrette. Simmer until heated through

Step 4Add pasta to a large bowl. Top with clam sauce & toss thoroughly. (If it seems not juicy enough, you can add a little extra olive oil.)

Step 5Serve with a hearty crusty bread & green salad.
