vegetarian sloppy joes

When I use bouillon cubes,I don't add additional salt but taste and season to your liking. My sons like a slice of tomato on their sloppy Joes,I like them plain,so that's optional. I've always liked sloppy Joes,so I've been looking for a vegetarian option since I stopped eating meat.

Ingredients

  • - 2 t. oil
  • - 10 oz mushrooms
  • - 1/2 onion,diced
  • - 1 carrot,diced
  • - 1 stalk celery
  • - 1/4 red bell pepper
  • - 1 c cooked lentils
  • - 3/4 c tomato sauce
  • - 1 t worcestershire sauce
  • - black pepper to taste
  • - 1/2 vegetable bouillon cube
  • - 1 c water
  • - 4 hamburger buns

How To Make vegetarian sloppy joes

  • Step 1
    In a large skillet, heat 1 tablespoon Vegetable oil over medium-high heat. Saute the mushrooms until they are browned. Remove from pan and set aside. Add the remaining 1 tablespoon of oil to the pan and sauté the onion until translucent. Add carrots, celery, and bell pepper and cook over medium heat for 5 minutes. Place the mushrooms back in the pan and add lentils, tomato sauce, Worcestershire sauce,vegetable bouillon cube and 1 c water. Turn heat to low and stir. Season to taste with pepper. Serve mixture between buns.
