turkey, bacon & cheese puff pastry
You’re going to love these puff pastries. They’re quick to make, and it’s possible you might have all the ingredients you need at hand. If you don’t have the exact ingredients… improvise a bit. One of my instructors said that all chefs are really mad scientists in disguise. When I do a catering job, I often make a smaller version of these, and no matter how many I make… I never seem to make enough. Well, you ready… Let’s get into the kitchen.

Ingredients
- 8 ounces thinly sliced turkey, available at your deli
- 4 slices swiss cheese
- 4 slices cheddar cheese
- 4 - strips of bacon, cooked and diced
- 4 - pieces of puff pastry 5 inches by 5 inches
- 2 teaspoons dijon mustard
- 1 teaspoon yellow mustard
- 1 teaspoon fresh honey
- 1 medium egg
- - kosher salt, or to taste
- - freshly ground black pepper, or to taste
- - dried basil for topping
How To Make turkey, bacon & cheese puff pastry

Step 1PREP WORK High Ho, High Ho… It’s off to work we go.

Step 2Gather your ingredients.

Step 3Cook the bacon until browned, and then dice and reserve.

Step 4Defrost and lay the puff pastry on a clean dry surface.

Step 5Break the egg into a small bowl, add a tablespoon of water, and whisk until incorporated.

Step 6Mix the dijon mustard, the yellow mustard, and the honey together in a small bowl.

Step 7MAKING THE PUFF PASTRIES

Step 8Place a rack in the middle position, and preheat the oven to 400f (205c)

Step 9Using a pastry brush, brush 1/4 of the mustard on each square.

Step 10For each square, layer with 1 slice Swiss cheese, 1 slice turkey, 1 quarter of the chopped bacon, and 1 slice of cheddar.

Step 11Chef’s Note: There are all kinds of sliced turkeys available. You’ve got regular, smoked, honey, Cajun… you name it. Choose your favorite variety and go for it.

Step 12Add some kosher salt, and pepper, to taste… or not.

Step 13Brush some of the egg wash on the edges of each square.

Step 14Fold into a triangle, and then seal the edges with a sealing tool, or the tines of a fork.

Step 15Place on a parchment-lined baking sheet, and brush the tops with more of the egg wash. And at this point sprinkle a bit of dried basil on top of each one.

Step 16Bake in the preheated oven for 20-25 minutes, or until the puff pastries are a beautiful golden brown.

Step 17Serve alone, or with a small tossed salad. Enjoy.
