Ingredients
- 10 ounces frozen chopped spinach, thawed and drained
- 1/2 cup chopped onion
- 1/2 cup sliced mushrooms
- 1/2 cup shredded cheddar cheese
- 2 tablespoons parmesan cheese
- 4 - egg whites
- 1/2 teaspoon baking powder
- - dash of seasoned salt, garlic powder and cajun seasoning
How To Make spinach fritatta

Step 1Cook thawed and drained spinach according to package directions. Season and set aside. In medium skillet, spayed with cooking oil spay, saute' the onion.

Step 2Add the spinach and cook a few minutes. Whisk the egg and egg whites in a medium bowl. Add the cheese and spinach and onion mixture and spoon the mixture into a deep dish pie plate that has been sprayed lightly with cooking oil spray.

Step 3Bake in a preheated oven at 375' for 25 minutes or until a testing knife comes out clean. Enjoy!! May be made with 10oz. frozen Asparagus spears, chopped, if desired.
