How to Make Scrambled Eggs
- Place in bowl with egg 1 tablespoon milk or cream for each egg, a dash of salt and pepper. Whisk with whisk until light and fluffy.
- Heat butter or bacon grease (1/2 tbsp. for each egg) in medium hot skillet. Pour in egg mixture and reduce heat to low. (eggs should be scrambled slowly and gently.)
- When mixture starts to set at bottom and sides, lift cooked portions with spatula, and turn gently so as to cook all portions evenly.
- As soon as eggs are cooked through but are still moist and glossy (5 to 8 Minutes), quickly remove to hot patter and serve at once.
