How to Make Quinoa Stuffed Acorn Squash

  1. Cut the squash in half and scoop out the insides.
Mix the butter and sage together. You can use any seasoning you want. I like the flavor the sage gave.
Bake on a sheet pan until tender- 45 minute - 1 hour at 350.
  2. While those are baking, start your quinoa. You need 1 part quinoa to 2 parts liquid. I used water, but you could use a stock if desired. Bring the liquid to a boil, add the quinoa, reduce heat and let simmer until the liquid is absorbed- about 10-15 minutes.
  3. Time to start the veggies. Grate, dice or slice as directed in the ingredient list. Heat oil over medium heat and add veggies. Stir until tender.
  4. Add the veggies to the quinoa and mix together. Now just stuff the squash halves.
