Ingredients
- THE SQUASH
- 3 - acorn sqush
- 4 tablespoons butter, room temperature
- 1-2 teaspoon sage or any herb you perfer
- QUINOA
- 1 cup quinoa
- 2 cups cooking liquid
- THE STUFFING
- 2 tablespoons olive oil
- 2 cloves garlic, crushed
- 1/4 cup onion, diced
- 1 large carrot, grated
- 6-8 ounces mushrooms, fresh, sliced
- 1 cup zucchini or yellow squash, diced
- 2 tablespoons cilantro, fresh, choped
- - feel free to add your favorite veggies
How To Make quinoa stuffed acorn squash

Step 1Cut the squash in half and scoop out the insides. Mix the butter and sage together. You can use any seasoning you want. I like the flavor the sage gave. Bake on a sheet pan until tender- 45 minute - 1 hour at 350.

Step 2While those are baking, start your quinoa. You need 1 part quinoa to 2 parts liquid. I used water, but you could use a stock if desired. Bring the liquid to a boil, add the quinoa, reduce heat and let simmer until the liquid is absorbed- about 10-15 minutes.

Step 3Time to start the veggies. Grate, dice or slice as directed in the ingredient list. Heat oil over medium heat and add veggies. Stir until tender.

Step 4Add the veggies to the quinoa and mix together. Now just stuff the squash halves.
