pancit- fried rice noodles with veges and chicken

Hurray!!!Finally, I made it to my 100th recipe!I got this recipe from my coworker and friend, Ester, who is from the Philipines.She brought this dish to work one time and I really liked it. So I asked her for the recipe. It is simple and delicious,especially if you have leftover turkey from Thanksgiving or some rotisserie chicken.

Ingredients

  • 1(8.8oz) package brown rice vermicelli or rice noodles
  • 1 - zucchini,sliced
  • 1 small onion,chopped
  • 2 - garlic cloves, chopped
  • 1 - carrot, julliened
  • 1 cup cabbage, shredded
  • 2 sticks celery ribs,sliced
  • 1 cup snow peas
  • 4 large hard boiled eggs
  • 2 cups cooked turkey or chicken meat,cut in small pc.
  • pinch smoked paprika powder
  • - sesame oil for fry
  • - garlic salt,papper or seasoned salt
  • 2 tablespoons soy sauce

How To Make pancit- fried rice noodles with veges and chicken

  • Step 1
    Soak rice noodles in warm water for 20-30 minutes. Meanwhile, fry the vegetables on sesame oil.First onion, celery,then cabbage. Then you can add the rest of the vegetables. Fry them for about 15 minutes.
  • Step 2
    Add cooked meat, fry for 5 minutes until heated through.Add the spices (except paprika).
  • Step 3
    Drain the noodles and add to veges mixture.Fry for about 10 minutes. Add the soy sauce. Add a little more oil as needed.
  • Step 4
    Cut the eggs in half and place them on the noodle mixture.Sprinkle the eggs with paprika.
  • Step 5
    I served this dish with Boston lettuce,grape tomatoes, avocado pieces, and feta cheese.
