Any kind of seasoning can be substituted for old bay seasoning: Italian, onion powder, cinnamon. This dish is good enough to convert my husband (a Mid-Westerner) to loving grits. I usually fix this as a complete supper for the 2 of us.

Ingredients

  • 2 c
    water
  • 3/4 c
    quick cooking grits
  • 2 Tbsp
    butter
  • dash(es)
    salt
  • 2 large
    eggs
  • 1/2 tsp
    old bay seasoning
  • 1/4 c
    shredded cheddar cheese
  • 1/4 c
    shredded parmesan cheese

How to Make Nana's Grits & Eggs

Step-by-Step

  1. Start stove at high. Put 2 c water in 2-qt saucepan. Add 2 tbsp butter, salt & old bay seasoning. Bring to a boil
  2. Using a whisk, slowly pour 3/4 c quick-cooking grits and whisk until thoroughly mixed. Bring back to a boil.
  3. Reduce heat to low-medium and continue whisking until grits begin to thicken. Whisk in eggs and mix thoroughly.
  4. Reduce heat to low and add cheeses. Whisk in until well blended. Serve immediately.
  5. If grits thicken too much, add a little milk and whisk until well blended.
