nana's grits & eggs
Any kind of seasoning can be substituted for old bay seasoning: Italian, onion powder, cinnamon. This dish is good enough to convert my husband (a Mid-Westerner) to loving grits. I usually fix this as a complete supper for the 2 of us.

Ingredients
- 2 cups water
- 3/4 cup quick cooking grits
- 2 tablespoons butter
- dash salt
- 2 large eggs
- 1/4 cup shredded cheddar cheese
- 1/4 cup shredded parmesan cheese
- 1/4 cup shredded mozzarella cheese
- 1/2 - 1 teaspoons old bay seasoning
How To Make nana's grits & eggs

Step 1Start stove at high. Put 2 c water in 2-qt saucepan. Add 2 tbsp butter, salt & old bay seasoning. Bring to a boil

Step 2Using a whisk, slowly pour 3/4 c quick-cooking grits and whisk until thoroughly mixed. Bring back to a boil.

Step 3Reduce heat to low-medium and continue whisking until grits begin to thicken. Whisk in eggs and mix thoroughly.

Step 4Reduce heat to low and add cheeses. Whisk in until well blended. Serve immediately.

Step 5If grits thicken too much, add a little milk and whisk until well blended.
