This is a healthy vegetarian main dish or a tasty side. It is simple to prepare, because you just toss all the ingredients in a rice cooker and let it do all the work. :-) This recipe's nutty nutty flavor is addictive: you start with one serving and suddenly the whole pot is gone.

Ingredients

  • 1 cup quinoa
  • 1 can kidney beans, drained
  • 1 cup fresh kale, chopped
  • 2 cups water
  • 2 teaspoons seasoned salt
  • 1 teaspoon garlic powder
  • 1 tablespoon sesame seeds (can be black for color contrast)
  • 3 tablespoons parmigiano-reggiano, grated (optional)
  • - salt and/or pepper to taste

How To Make kale quinoa

  • Step 1
    Place all ingredients except cheese into the rice cooker.
  • Step 2
    Turn on rice cooker, and let it do its magic. (I used a microwaveable rice cooker.)
  • Step 3
    If you like, you can top with grated cheese. Enjoy!
