italian stuffed peppers
This a an easy stuffed pepper, and the house smells so good as the sauce simmers and the peppers bake. I adapted my Dad's base parmesan sauce recipe and went from there. Happy eating and let me know what you think.

Ingredients
- - 4 large green bell peppers
- 1 1/2 pounds italian sausage sweet or spicy your choice
- 1 - medium onion chopped
- 12 - baby bellas chopped
- 3 stalks of celery chopped
- 5 - roma tomatoes chopped
- 1/2 cup good red wine (i use reunite lambrusco)
- 2 cans tomato sauce
- 3 cloves garlic minced
- 1 package linguini broken into thirds
How To Make italian stuffed peppers

Step 1Chop off the tops of the peppers and set aside. Remove the stems from the tops, chop and set it aside. Remove the seeds from the body of the pepper and wash it.

Step 2Cook the sausage. Saute all the veggies in a couple of tablespoons of olive oil and a minced clove of garlic.

Step 3Combine the sausage and veggies. Add the tomato sauce, wine, a tablespoon of sugar, and remaining garlic. Simmer for 45 minutes to a hour.

Step 4Cook the pasta, then combined with the sauce. Stuff the peppers and place in a casserole dish snuggly. Sprinkle with parmesan cheese and bake at 400 for 20-30 minutes. Serve with a salad and garlic bread and enjoy.
