My first Mother-in-law gave me this very easy very delish recipe 40 years ago. I have tried other recipes but this is still mine and #2 hubby's favorite. It makes enough for 2 loaves.

  • 2 lb
    ground beef, extra lean
  • 1 c
    onion, chopped
  • 1 c
    bell pepper, chopped
  • 2 can(s)
    tomato sauce
  • ·
    bread crumbs, enough to bind
  • 2 large
    eggs, raw
  • 2 Tbsp
  • ·
    salt & pepper to taste

How to Make Mother-In-Law's Meatloaf


  1. In large bowl, put beef, egg, 1 can tomato sauce, bread crumbs and salt & pepper.
  2. Mix with hands until combined. Set aside.
  3. In medium fry pan melt 2 T butter and cook onions & peppers until soft.
  4. Add onions & peppers to meat mixture. Mix until completely combined. Mixture should not be very wet but not dry either.
  5. Put meat mixture into non-stick loaf pans. This makes 2 loaves. Cover each loaf with 1/2 a can tomato sauce.
  6. Bake @ 350 F. for 1 hour or until meat is well done.
