mother-in-law's meatloaf
My first Mother-in-law gave me this very easy very delish recipe 40 years ago. I have tried other recipes but this is still mine and #2 hubby's favorite. It makes enough for 2 loaves.

Ingredients
- 2 pounds ground beef, extra lean
- 1 cup onion, chopped
- 1 cup bell pepper, chopped
- 2 cans tomato sauce
- - bread crumbs, enough to bind
- 2 large eggs, raw
- 2 tablespoons butter
- - salt & pepper to taste
How To Make mother-in-law's meatloaf

Step 1In large bowl, put beef, egg, 1 can tomato sauce, bread crumbs and salt & pepper.

Step 2Mix with hands until combined. Set aside.

Step 3In medium fry pan melt 2 T butter and cook onions & peppers until soft.

Step 4Add onions & peppers to meat mixture. Mix until completely combined. Mixture should not be very wet but not dry either.

Step 5Put meat mixture into non-stick loaf pans. This makes 2 loaves. Cover each loaf with 1/2 a can tomato sauce.

Step 6Bake @ 350 F. for 1 hour or until meat is well done.
