My first Mother-in-law gave me this very easy very delish recipe 40 years ago. I have tried other recipes but this is still mine and #2 hubby's favorite. It makes enough for 2 loaves.

prep time 30 Min
cook time 1 Hr
method Bake
yield 4 - 6 per loaf

Ingredients

  • 2 pounds ground beef, extra lean
  • 1 cup onion, chopped
  • 1 cup bell pepper, chopped
  • 2 cans tomato sauce
  • - bread crumbs, enough to bind
  • 2 large eggs, raw
  • 2 tablespoons butter
  • - salt & pepper to taste

How To Make mother-in-law's meatloaf

  • Step 1
In large bowl, put beef, egg, 1 can tomato sauce, bread crumbs and salt & pepper.
  • Step 2
Mix with hands until combined. Set aside.
  • Step 3
In medium fry pan melt 2 T butter and cook onions & peppers until soft.
  • Step 4
Add onions & peppers to meat mixture. Mix until completely combined. Mixture should not be very wet but not dry either.
