Ingredients

  • 250 mg - mince
  • 1/2 cup fresh bread crumbs
  • 1/2 cup onion
  • 1/2 cup carrot
  • 1 tablespoon tomato sauce
  • 1/2 teaspoon dried herbs
  • 1 tablespoon egg
  • 2 tablespoons barbecue sauce
  • 8 - green beans
  • 2 - frozen corncobs
  • 2 - potatoes

How To Make healthy meatloaf

  • Step 1
    Pre-heat oven to 180
  • Step 2
    Dice onion and carrot
  • Step 3
    In a large bowl mix together breadcrumbs,carrot,onion,herbs, salt and pepper.
  • Step 4
    Shape the meat into loaf form
  • Step 5
    Bake for 25 minutes
  • Step 6
    Peel and quarter potatoes, place in saucepan and cover, boil for 15 minutes or until tender
  • Step 7
    Drain potatoes, top and tail green beans
  • Step 8
    Place corn and beens in microwave safe bowl and cook for 5 minutes
  • Step 9
    Place potatoes in bowl, mash
  • Step 10
    Add milk,butter and continue to mash until smooth
  • Step 11
    Remove meatloaf from oven, drain extra fat from the baking tray, brush the top with the B-B-Q sauce and bake for 10 minutes
