The flavors in this salad may be better suited for summer, but I enjoy eating it any time - the spare dressing is excellent as a dip for fresh green beans, as well.

Ingredients

fresh kale, torn
1/2
grapefruit, sectioned
1/4 c
parmesan cheese
1/4 c
pistachio nuts, shelled
1/4 c
edamame, shelled

DRESSING

1
avocado
1/4 c
salsa verde
1 Tbsp
raw honey
2 Tbsp
orange juice
2 Tbsp
lime juice
1 Tbsp
water

How to Make Kale Citrus and Avocado Salad

Step-by-Step

  • 1Combine all dressing ingredients in a small food processor or blender and blend until smooth. Add more water or orange juice if you prefer a thinner consistency dressing.
  • 2In a large bowl, combine all salad ingredients and half of the dressing. Stir together well. The flavors and consistency are actually best if you allow to chill overnight in a covered container.
  • 3Store then remaining dressing refrigerated up to one week in a tightly sealed container.
