kale citrus and avocado salad
The flavors in this salad may be better suited for summer, but I enjoy eating it any time - the spare dressing is excellent as a dip for fresh green beans, as well.

Ingredients
- 4 cups fresh kale, torn
- 1/2 - grapefruit, sectioned
- 1/4 cup parmesan cheese
- 1/4 cup pistachio nuts, shelled
- 1/4 cup edamame, shelled
- DRESSING
- 1 - avocado
- 1/4 cup salsa verde
- 1 tablespoon raw honey
- 2 tablespoons orange juice
- 2 tablespoons lime juice
- 1 tablespoon water
How To Make kale citrus and avocado salad

Step 1Combine all dressing ingredients in a small food processor or blender and blend until smooth. Add more water or orange juice if you prefer a thinner consistency dressing.

Step 2In a large bowl, combine all salad ingredients and half of the dressing. Stir together well. The flavors and consistency are actually best if you allow to chill overnight in a covered container.

Step 3Store then remaining dressing refrigerated up to one week in a tightly sealed container.
