kale citrus and avocado salad

The flavors in this salad may be better suited for summer, but I enjoy eating it any time - the spare dressing is excellent as a dip for fresh green beans, as well.

Ingredients

  • 4 cups fresh kale, torn
  • 1/2 - grapefruit, sectioned
  • 1/4 cup parmesan cheese
  • 1/4 cup pistachio nuts, shelled
  • 1/4 cup edamame, shelled
  • DRESSING
  • 1 - avocado
  • 1/4 cup salsa verde
  • 1 tablespoon raw honey
  • 2 tablespoons orange juice
  • 2 tablespoons lime juice
  • 1 tablespoon water

How To Make kale citrus and avocado salad

  • Step 1
    Combine all dressing ingredients in a small food processor or blender and blend until smooth. Add more water or orange juice if you prefer a thinner consistency dressing.
  • Step 2
    In a large bowl, combine all salad ingredients and half of the dressing. Stir together well. The flavors and consistency are actually best if you allow to chill overnight in a covered container.
  • Step 3
    Store then remaining dressing refrigerated up to one week in a tightly sealed container.
