I like to make my salads from scratch and everything has to be fresh but sometimes I need to use a prepacked salad mix and this is how I made the salad. I tweeked it alot to the way my family enjoys it. It is so good and you can enjoy this salad anytime for a fast lunch or dinner, goes well with burgers, fish and chicken.

Ingredients For chicken ranch & bacon club pasta salad

  • 2 boxes of betty crocker ranch and bacon pasta,vegetable blend with seasoning packets. salad contians dehydrated carrots and peas. 7.5 oz each box
  • 4 cups diced tomatoes. i used roman tomatoes.
  • 3 cups lettuce, cut into thin strips. i use romaine lettuce.
  • 4 to 5 slices bacon, cooked and crumbled up. any brand will work. i use hormel microwave bacon
  • 1/2 cup julienne strips of cheddar cheese
  • 3-5.oz cans of great value chunk chicken breast, drain off juice from the cans
  • dash each of salt and pepper, you can adjust the amounts according to your taste.
  • dash of dill weed- adjust amount according to taste.
  • dressing recipe:
  • 4 tbsps cider vinegar
  • 1 cup mayo- any brand
  • 2 tbsps dijon mustard
  • 2/3 cup sour cream
  • dash salt and pepper

How To Make chicken ranch & bacon club pasta salad

    Follow package directions on the back of the boxes of pasta salad.(12 minutes)

    In a large bowl add all the ingredients, sauce packets that comes from the pasta mixes. Add cooled cooked pasta and mix very well and set aside. Make the dressing for the salad.

    In a medium bowl, add all the ingredients for the dressing and mix very well. Add the dressing to the pasta salad and mix very well until everything is coated real good.

    Chill for 2 hrs or overnight so flavors can blend. You may want to enjoy the salad right away too!

    *****Prep time is 10 minutes, cook time is 12 minutes and over all complete in 2 hrs or overnight and done the next day.

    **** You can bake boneless chicken breast, cool, dice and add to salad. I used canned chicken, it is what i had on hand.
