Heat, salty and sweet go wonderfully with a thick piece of flounder. Please note this method works for FROZEN flounder. This method results in a super silky, melt-in-your-mouth flounder.

Ingredients

  • 2 - flounder fillets (i used frozen wild caught arrowhead flounder)
  • 1/4 cup teriyaki sauce
  • 1/4 cup grenadine
  • 1/2 teaspoon coarse sea salt
  • 1/2 teaspoon pepper
  • 1/4 teaspoon cinnamon
  • 1/4 teaspoon ground ginger
  • 1/4 teaspoon crushed red pepper
  • dash - ground cloves
  • 2 teaspoons apricot jam
  • 2 teaspoons unsalted butter

How To Make spiced cherry flounder

  • Step 1
This method works with frozen flounder. Right out of the freezer, pour all of teriyaki and grenadine over the fish. Then add half of all the spices (EXCEPT FOR CLOVES) you are using, over the fish. Let frozen fish marinate by sitting in room temp for about 2 hours.
  • Step 2
After an hour, turn over the fish and top the other side with the remaining spices (EXCEPT FOR CLOVES).
  • Step 3
Preheat oven to 425. Place fish, and the marinade juices, in baking dish. Top with butter, jam, another dash of grenadine, and cloves.
  • Step 4
Cover with foil and bake for 20-22 minutes, until fish is tender in the center.
