This was a grocery store recipe that I have altered. It is especially delicious with grilled salmon left overs.

8 oz
leftover baked or grilled salmon, cut into chunks
1/3 c
cucumbers, diced
1/3 c
celery, diced
1/4 c
fresh parsley, rough chopped
2 Tbsp
red onion, chopped
2 Tbsp
reduced fat mayonnaise
2 tsp
lemon juice
2 tsp
lettuce for serving

How to Make Salmon Salad


  • 1In medium bowl, flake salmon with a fork.
  • 2Add remaining ingredients and mix well. Serve over a bed of lettuce
  • 3You can substitute a 7.5 oz can of wild caught salmon.
