This was a grocery store recipe that I have altered. It is especially delicious with grilled salmon left overs.

Ingredients
- 8 ounces leftover baked or grilled salmon, cut into chunks
- 1/3 cup cucumbers, diced
- 1/3 cup celery, diced
- 1/4 cup fresh parsley, rough chopped
- 2 tablespoons red onion, chopped
- 2 tablespoons reduced fat mayonnaise
- 2 teaspoons lemon juice
- 2 teaspoons capers
- - lettuce for serving
How To Make salmon salad

Step 1In medium bowl, flake salmon with a fork.

Step 2Add remaining ingredients and mix well. Serve over a bed of lettuce

Step 3You can substitute a 7.5 oz can of wild caught salmon.
