This was a grocery store recipe that I have altered. It is especially delicious with grilled salmon left overs.

Ingredients For salmon salad

  • 8 oz
    leftover baked or grilled salmon, cut into chunks
  • 1/3 c
    cucumbers, diced
  • 1/3 c
    celery, diced
  • 1/4 c
    fresh parsley, rough chopped
  • 2 Tbsp
    red onion, chopped
  • 2 Tbsp
    reduced fat mayonnaise
  • 2 tsp
    lemon juice
  • 2 tsp
    capers
  • lettuce for serving

How To Make salmon salad

  • 1
    In medium bowl, flake salmon with a fork.
  • 2
    Add remaining ingredients and mix well. Serve over a bed of lettuce
  • 3
    You can substitute a 7.5 oz can of wild caught salmon.
