salmon casserole

I have never made this recipe before. However, my husband and I love tin red salmon. I will be making this recipe soon. This recipe is taken from the "Company's Coming " " Timeless recipes for all occasions." It's a quick weekday supper or great for entertaining company with a nice green salad. Enjoy

Ingredients

  • - 7+1/2 oz. can of red salmon, bones and skin removed
  • - 1/2 cup dried bread crumbs
  • - 6 tbsp hard margarine or butter
  • - 6 tbsp all purpose flour
  • - 3/4 tsp salt
  • - 1/4 tsp pepper
  • - 3+1/3 cups of milk
  • - 7+1/2 oz. canned red salmon, skin and bones removed
  • - 1/2 cup dried bread crumbs

How To Make salmon casserole

  • Step 1
    Crumble first amount of salmon into ungreased 1+1/2 quart casserole dish. Sprinkle first amount of bread crumbs over the top.
  • Step 2
    SAUCE : Melt margarine or butter in medium saucepan. Mix in flour, salt and pepper. Stir in milk. Heat, stirring constantly, until boiling and thickened. A whisk works well to prevent lumping. Pour 1/3 of sauce over the bread crumbs in casserole
  • Step 3
    Crumble second amount of salmon over top of casserole.
  • Step 4
    Sprinkle second amount of bread crumbs over salmon.
  • Step 5
    Pour remaining sauce over top layer of crumbs.
  • Step 6
    Use a knife to poke holes here and there to allow a bit of sauce to sink to the bottom.
  • Step 7
    Bake uncovered, in a 350 F oven for 30 minutes until hot and bubbly.
  • Step 8
    Sprinkle top with dried parsley (optional)

    Serves 6
