I have never made this recipe before. However, my husband and I love tin red salmon. I will be making this recipe soon. This recipe is taken from the "Company's Coming " " Timeless recipes for all occasions." It's a quick weekday supper or great for entertaining company with a nice green salad.

  • ·
    1/2 cup dried bread crumbs
  • ·
6 tbsp hard margarine or butter
  • ·
    6 tbsp all purpose flour
  • ·
    3/4 tsp salt
  • ·
    1/4 tsp pepper
  • ·
    3+1/3 cups of milk
  • ·
7+1/2 oz. canned red salmon, skin and bones removed
  • ·
    1/2 cup dried bread crumbs

How to Make Salmon casserole

  1. Crumble first amount of salmon into ungreased 1+1/2 quart casserole dish. Sprinkle first amount of bread crumbs over the top.
  2. SAUCE :
Melt margarine or butter in medium saucepan. Mix in flour, salt and pepper. Stir in milk. Heat, stirring constantly, until boiling and thickened. A whisk works well to prevent lumping. Pour 1/3 of sauce over the bread crumbs in casserole
  3. Crumble second amount of salmon over top of casserole.
  4. Sprinkle second amount of bread crumbs over salmon.
  5. Pour remaining sauce over top layer of crumbs.
  6. Use a knife to poke holes here and there to allow a bit of sauce to sink to the bottom.
  7. Bake uncovered, in a 350 F oven for 30 minutes until hot and bubbly.
  8. Sprinkle top with dried parsley (optional)
  9. Serves 6
