My husband is a big fish eater. Me - not so much... That is why I always try different ways of cooking it. This is a mash-up of a number of different recipes. It smells totally devine while it's cooking!

Ingredients

  • SAUCE
  • 3/4 cup plain greek yogurt
  • 2 tablespoons parsley, chopped
  • 1 1/2 tablespoons capers, chopped
  • 2 tablespoons orange juice, fresh
  • 1/2 teaspoon orange zest
  • - salt and pepper to taste
  • FISH
  • 1 - salmon, skinless filet, cut in portions
  • 1 - egg
  • 2 tablespoons orange juice, fresh
  • 1 tablespoon olive oil
  • 1 cup pistachio nuts, chopped fine
  • - salt and pepper to taste

How To Make pistachio crusted salmon with orange yogurt sauce

  • Step 1
    For the sauce, mix all the ingredients and add salt and pepper to taste. This should sit for a while, so the flavours can develop.
  • Step 2

    Heat oven to 375F and spray a cookie sheet with non-stick cooking spray.
  • Step 4
    Beat the egg, orange juice and olive oil in a bowl. Season the fish with salt and pepper, dredge in the egg mixture and then cover the pieces with the chopped nuts.
  • Step 5
    Place on the cookie sheet and bake for 8-10 minutes or until the fish flakes easily.
  • Step 6
    Serve the fish with the yogurt sauce and wild rice.
