pistachio crusted salmon with orange yogurt sauce
My husband is a big fish eater. Me - not so much... That is why I always try different ways of cooking it. This is a mash-up of a number of different recipes. It smells totally devine while it's cooking!

Ingredients
- SAUCE
- 3/4 cup plain greek yogurt
- 2 tablespoons parsley, chopped
- 1 1/2 tablespoons capers, chopped
- 2 tablespoons orange juice, fresh
- 1/2 teaspoon orange zest
- - salt and pepper to taste
- FISH
- 1 - salmon, skinless filet, cut in portions
- 1 - egg
- 2 tablespoons orange juice, fresh
- 1 tablespoon olive oil
- 1 cup pistachio nuts, chopped fine
- - salt and pepper to taste
How To Make pistachio crusted salmon with orange yogurt sauce

Step 1For the sauce, mix all the ingredients and add salt and pepper to taste. This should sit for a while, so the flavours can develop.

Step 2For the fish:

Step 3Heat oven to 375F and spray a cookie sheet with non-stick cooking spray.

Step 4Beat the egg, orange juice and olive oil in a bowl. Season the fish with salt and pepper, dredge in the egg mixture and then cover the pieces with the chopped nuts.

Step 5Place on the cookie sheet and bake for 8-10 minutes or until the fish flakes easily.

Step 6Serve the fish with the yogurt sauce and wild rice.
