My husband is a big fish eater. Me - not so much... That is why I always try different ways of cooking it. This is a mash-up of a number of different recipes. It smells totally devine while it's cooking!

  • 3/4 c
    plain greek yogurt
  • 2 Tbsp
    parsley, chopped
  • 1 1/2 Tbsp
    capers, chopped
  • 2 Tbsp
    orange juice, fresh
  • 1/2 tsp
    orange zest
  • ·
    salt and pepper to taste
  • FISH

  • 1
    salmon, skinless filet, cut in portions
  • 1
    egg
  • 2 Tbsp
    orange juice, fresh
  • 1 Tbsp
    olive oil
  • 1 c
    pistachio nuts, chopped fine
  • ·
    salt and pepper to taste

How to Make Pistachio Crusted Salmon with Orange Yogurt Sauce

Step-by-Step

  1. For the sauce, mix all the ingredients and add salt and pepper to taste. This should sit for a while, so the flavours can develop.
  2. For the fish:
  3. Heat oven to 375F and spray a cookie sheet with non-stick cooking spray.
  4. Beat the egg, orange juice and olive oil in a bowl. Season the fish with salt and pepper, dredge in the egg mixture and then cover the pieces with the chopped nuts.
  5. Place on the cookie sheet and bake for 8-10 minutes or until the fish flakes easily.
  6. Serve the fish with the yogurt sauce and wild rice.
