This quick and easy fish entree is spicy and savory. I serve it with home made pinto beans, but any starch will do.

Ingredients

  • 1 lb
    fish filets, your choice
  • 1/2 large
    white onions
  • 1 1/2 large
    tomato
  • 1/4 c
    cilantro, fresh
  • 2 large
    serrano chiles
  • 3 oz
    olive oil, extra virgin
  • 3 oz
    red wine vinegar
  • 2 tsp
    salt
  • 1 1/2 tsp
    black pepper
  • 1/2 Tbsp
    lemon pepper
  • 1 tsp
    red chili powder
  • 3/4 tsp
    cumin
  • 1 Tbsp
    garlic
  • 2 Tbsp
    lime juice
  • PICO DE GALLO

How to Make Pico de Gallo Fish

Step-by-Step

  1. Marinade any fish in honey mustard dressing, salt & pepper to cover while chopping Pico de Gallo.
  2. Chop each ingredient and add to a bowl, then toss like a salad.
  3. Place in frig while pan frying fish. I use coconut oil, (just enough to cover the bottom of the pan), to fry for about 3 or 4 minutes on each side.
  4. Top fish with Pico de Gallo & serve with a starch. I serve with home made pinto beans.
