Ingredients
- 1 large mango, peeled and chopped (1 1/2 cups)
- 1 small sweet red pepper (or red bell pepper), diced
- 2 tablespoons finely chopped red onion
- 1 teaspoon ground ginger (optional)
- 2 tablespoons chopped fresh mint
- 2 tablespoons orange juice
- 1 1/2 teaspoons harissa (a hot red pepper sauce)
- 4 large salmon fillets, skinned (about 1 1/2 lb total)
- 1/4 teaspoon salt
How To Make moroccan roasted salmon with mango salsa

Step 1Preheat oven to 450ºF.

Step 2Combine chopped mango, red pepper, onion, ginger (if using), mint and orange juice in a bowl. Cover and store in refrigerator until ready to use.

Step 3Spread harissa over both sides of salmon fillets; sprinkle with salt. Place salmon on a baking sheet coated with cooking spray. Bake at 450º for 20 minutes or until the fish flakes easily when tested with a fork.

Step 4Serve with the mango salsa.
