This is a great way to prepare salmon. The salsa adds a great touch, providing the entire dish a sweet and spicy element.

Ingredients

  • 1 large mango, peeled and chopped (1 1/2 cups)
  • 1 small sweet red pepper (or red bell pepper), diced
  • 2 tablespoons finely chopped red onion
  • 1 teaspoon ground ginger (optional)
  • 2 tablespoons chopped fresh mint
  • 2 tablespoons orange juice
  • 1 1/2 teaspoons harissa (a hot red pepper sauce)
  • 4 large salmon fillets, skinned (about 1 1/2 lb total)
  • 1/4 teaspoon salt

How To Make moroccan roasted salmon with mango salsa

  • Step 1
    Preheat oven to 450ºF.
  • Step 2
    Combine chopped mango, red pepper, onion, ginger (if using), mint and orange juice in a bowl. Cover and store in refrigerator until ready to use.
  • Step 3
    Spread harissa over both sides of salmon fillets; sprinkle with salt. Place salmon on a baking sheet coated with cooking spray. Bake at 450º for 20 minutes or until the fish flakes easily when tested with a fork.
  • Step 4
    Serve with the mango salsa.
