martha's healthy fried tuna patties
My wonderful cousin Martha made these for our lunch when I visited my family in Kentucky last summer and I had to have the recipe. We had some leftover which we ate cold as snacks the next day. They were just as delicious!

Ingredients
- 1 can black beans, drained & rinsed
- 1 small red onion, finely chopped
- 1 small green bell pepper, finely chopped
- 1/4 cup mayonnaise
- 2 tablespoons carribean jerk seasoning
- 1 1/3 cups panko bread crumbs, divided
- 2 CANS TUNA, DRAINED
- DRESSING
- 1/2 cup mayonnaise
- 2 tablespoons carribean jerk seasoning
- 4 teaspoons lime juice
- - a sprinkle of dill weed if desired
How To Make martha's healthy fried tuna patties

Step 1Mix 1st seven ingredients together, using 1 cup of the Panko bread crumbs

Step 2Form into patties and press patties into the 1/3 cup of remaining Panko crumbs.

Step 3Fry in hot oil of your choice, (olive oil NOT recommended)until golden brown, gently flip over and fry till golden on the other side. Remove from oil and drain on paper towels. Serve with dressing if desired.

Step 4Mix dressing ingredients together and chill while frying patties.
