We love good fried catfish and probably everybody has their way of frying fish. This is how I do it. Nothing fancy, but it sure tastes good. Hope you like it.

Ingredients
- 1 cup all purpose flour
- 1/2 cup yellow cornmeal
- 1/2 cup white cornmeal
- 1/2 teaspoon paprika
- 1 1/2 teaspoons salt, divided
- 1/4 teaspoon onion powder
- 1/4 teaspoon cayenne pepper
- 1/2 teaspoon garlic powder
- 1/4 teaspoon black pepper
- 2 cups vegetable oil
- 1/2 cup milk
- 2 large eggs
- 6 - 8 oz. catfish fillets
How To Make fried catfish

Step 1Combine the flour with the paprika, 1/2 tsp of the salt, the garlic powder, black pepper, onion powder and cayenne pepper.

Step 2In a separate shallow dish, mix eggs, milk and the remaining tsp of salt.

Step 3In another dish, combine the two cornmeals.

Step 4Dredge each catfish fillet in the flour mixture first, then the egg mixture, then the cornmeal mixture last.

Step 5Heat oil in a deep skillet and fry 3 fillets until golden brown on one side (about 5 minutes). Turn fish over and fry on the other side about 5 minutes until golden brown and flake tender. Remove and drain on paper towels. Add remaining 3 fillets and fry.
