My family loves fish and we are lucky enough to live right by the bay so the fish is fresh daily. We also love garlic and if you are a garlic lover, into healthy eating, you're sure to love this recipe too!

Ingredients

  • 4 - flounder filets
  • 1/2 cup bread crumbs, seasoned
  • 4 cloves garlic diced small
  • 3 tablespoons organic butter sliced into four pieces
  • 3 tablespoons extra virgin olive oil
  • 4 tablespoons parmesan cheese
  • 1 tablespoon fresh parsley
  • 1 teaspoon salt
  • 1 teaspoon pepper

How To Make baked flounder with a garlic breadcrumb topping

  • Step 1
    Preheat oven to 350. In shallow baking dish, spread 1 tbsp of extra virgin olive oil to coat entire bottom of pan. Set aside.
  • Step 2
    In dry skillet on low heat, add bread crumbs and diced garlic. Shake pan and cook until bread crumbs begin to brown. This should take about 5 minutes shaking the pan intermittenly. Watch carefully so that bread crumbs do not burn.
  • Step 3
    Season each fillet with salt/pepper and place in baking pan. Top each with a piece of butter. Sprinkle each fillet with garlic/bread crumb mixture, parmesan cheese and chopped parsley.
  • Step 4
    Drizzle with remaining olive oil. Bake for 20-25 minutes.
