Ingredients For baked flounder with a garlic breadcrumb topping

  • 4
    flounder filets
  • 1/2 c
    bread crumbs, seasoned
  • 4 clove
    garlic diced small
  • 3 Tbsp
    organic butter sliced into four pieces
  • 3 Tbsp
    extra virgin olive oil
  • 4 Tbsp
    parmesan cheese
  • 1 Tbsp
    fresh parsley
  • 1 tsp
    salt
  • 1 tsp
    pepper

How To Make baked flounder with a garlic breadcrumb topping

    Preheat oven to 350. In shallow baking dish, spread 1 tbsp of extra virgin olive oil to coat entire bottom of pan. Set aside.

    In dry skillet on low heat, add bread crumbs and diced garlic. Shake pan and cook until bread crumbs begin to brown. This should take about 5 minutes shaking the pan intermittenly. Watch carefully so that bread crumbs do not burn.

    Season each fillet with salt/pepper and place in baking pan. Top each with a piece of butter. Sprinkle each fillet with garlic/bread crumb mixture, parmesan cheese and chopped parsley.

    Drizzle with remaining olive oil. Bake for 20-25 minutes.
