1/2 cbread crumbs, seasoned
4 clovegarlic diced small
3 Tbsporganic butter sliced into four pieces
3 Tbspextra virgin olive oil
4 Tbspparmesan cheese
1 Tbspfresh parsley
How to Make Baked flounder with a garlic breadcrumb topping
- Preheat oven to 350. In shallow baking dish, spread 1 tbsp of extra virgin olive oil to coat entire bottom of pan. Set aside.
- In dry skillet on low heat, add bread crumbs and diced garlic. Shake pan and cook until bread crumbs begin to brown. This should take about 5 minutes shaking the pan intermittenly. Watch carefully so that bread crumbs do not burn.
- Season each fillet with salt/pepper and place in baking pan. Top each with a piece of butter. Sprinkle each fillet with garlic/bread crumb mixture, parmesan cheese and chopped parsley.
- Drizzle with remaining olive oil. Bake for 20-25 minutes.
