tasty tomato chicken curry

I picked this basic Sri Lankan curry up from some friends of the family and adapted it to suit our tastes. An easy and delicious introduction to South Asian cuisine, this curry is not spicy, but bursting with flavors and easy enough that anyone can make it! If you prefer your curry spicy, simply add your favorite form of heat either during the cooking process or at the table. Cooks up great from frozen in the slow cooker or crock pot too. Enjoy!!

Ingredients

  • 6 - chicken thighs, bone in
  • 7 tablespoons larich's roasted curry powder
  • 4 tablespoons vegetable oil
  • 2 large shallots - chopped
  • 1 medium onion chopped
  • 3 cloves garlic - chopped
  • 2 cans crushed tomatoes (28 oz)
  • 1 - bay leaf
  • 1 1/2 tablespoons salt
  • 1 1/2 tablespoons sugar
  • 1/2 teaspoon ground black peeper
  • 4 cups cauliflower - bite sized pieces
  • 1 package frozen petite peas
  • 2 medium potatoes -cubed
  • 2 tablespoons ground fresh chile paste (i use sambal oelek)

How To Make tasty tomato chicken curry

  • Step 1
    Heat curry powder in the bottom of a dry soup pot over medium until fragrant, stirring occasionally to prevent burning - about 3 mins
  • Step 2
    add oil, onions, garlic and shallots and mix well. Should form a paste like consistency..Cook for 3-4 minutes
  • Step 3
    Add Chicken thighs and brown over medium heat for 5-7 minutes turning as required
  • Step 4
    Stir in crushes tomatoes, Salt, Sugar, Bay Leaf,Chile paste and pepper. Mix well and simmer for 60 minutes
  • Step 5
    Add cauliflower and potatoes, simmer for 30 minutes longer
  • Step 6
    Stir in peas for last 5 mins and serve over rice. Enjoy!!
