I had to share this super simple sausage and peppers recipe, inspired and created by my bestie. She whips this up all the time, and it's delicious. Packed with protein and fairly healthy, you too will love making this dish a quick dinner for yourself, or for the family.

  • 4
    sausage links, sliced on the diagonal (flavor choice is up to you. i love aidells spinach and feta or chicken and apple)
  • 1 medium
    red bell pepper, sliced
  • 1 medium
    orange or yellow bell pepper, sliced
  • 1 medium
    onion, sliced
  • 2 Tbsp
    coconut oil (or bacon grease)
  • 2 c
    kale, shredded (optional)

How to Make Super simple sausage, peppers and onion recipe


  1. In a large frying pan, heat oil over medium heat. Saute the peppers and onions for about 8 minutes.
  2. If adding kale, add now, and saute for a few more minutes with the peppers until slightly wilted.
  3. Add the sausage and heat through for about another 3-5 minutes, tossing consistently.
  4. Remove from heat, and serve! It's that easy.
