smoky ginger-scallion chicken
I got this recipe from Weight Watcher's Easy Mains and Sides recipe book. WW Points: 5 *Original recipe was for grilling but I changed it to baking. Depending on oven, time may vary. I start checking the temperature after an hour.

Ingredients
- 6 - scallions
- 1 tablespoon grated peeled fresh ginger
- 2 - garlic cloves, minced
- 1 tablespoon honey
- 2 teaspoons reduced-sodium soy sauce
- 1 teaspoon sesame oil
- 1/2 teaspoon salt
- 1/4 teaspoon red pepper flakes
- 3 1/2 pounds chicken, giblets discarded
How To Make smoky ginger-scallion chicken

Step 1Preheat oven to 350 degrees.

Step 2Finely chop 4 scallions. Mix together chopped scallions, ginger, garlic, honey, soy sauce, sesame oil, salt, and pepper flakes in small bowl. Slip your fingers under skin of chicken over breast, thighs, and legs to loosen skin. Rub scallion mixture into meat under skin. Tuck wings under; tie legs together with kitchen string.

Step 3Place chicken in roasting pan. Cook for 1 hour and 15 minutes until internal temperature reaches 180 degrees.
