Ingredients
- 4 cups low sodium chicken broth
- 4 cups water
- 2-2 1/2 pounds chicken breast halves, skinless and boneless, (4-6)
- 2 slices bay leaves, dried
- 1 - lemon, thinly sliced
- 5-6 - whole peppercorns
How To Make simple poached chicken

Step 1Preheat oven to 400 degrees. Combine broth and water. Put chicken in a 13x9 casserole pan. Pour broth and water over chicken. Add bay leaves and peppercorns to liquid. Place sliced lemons on top of chicken.

Step 2Cover with foil. Bake for 35 mins or until chicken is no longer pink inside.

Step 3Shred, cube , julienne or leave whole. Put in baggies to use in next few days or freeze for future use.
