This chicken can be used for anything that calls for it...soups, salads, chili, pasta, etc. Save the broth to use for other things or to poach more chicken.

Ingredients

  • 4 cups low sodium chicken broth
  • 4 cups water
  • 2-2 1/2 pounds chicken breast halves, skinless and boneless, (4-6)
  • 2 slices bay leaves, dried
  • 1 - lemon, thinly sliced
  • 5-6 - whole peppercorns

How To Make simple poached chicken

  • Step 1
    Preheat oven to 400 degrees. Combine broth and water. Put chicken in a 13x9 casserole pan. Pour broth and water over chicken. Add bay leaves and peppercorns to liquid. Place sliced lemons on top of chicken.
  • Step 2
    Cover with foil. Bake for 35 mins or until chicken is no longer pink inside.
  • Step 3
    Shred, cube , julienne or leave whole. Put in baggies to use in next few days or freeze for future use.
