Easy and NO mess! While the fajitas are baking, get the tortillas ready, and round up the kids to set the table. This one goes quickly!

Ingredients

  • 1 pound chicken breast, boneless, skinless, cut into strips
  • 1 can (15 oz) rotel diced tomatoes with green chilies, drained
  • SLICE N DICE
  • 1 medium onion, sliced
  • 1/2 - red bell pepper, cut into strips
  • 1/2 - green bell pepper, cut into strips
  • - sliced mushrooms, optional
  • MIX IN A BOWL
  • 2 tablespoons olive oil
  • 2 teaspoons chili powder
  • 1 1/2 teaspoons cumin
  • 1/2 teaspoon each garlic powder and dried oregano
  • 1/4 teaspoon salt or seasoned salt

How To Make oven baked chicken fajitas

  • Step 1
    Preheat oven to 400 degrees; grease a 13x9 pan; add chicken strips and tomatoes to pan.
  • Step 2
    Slice peppers and onions then add to chicken-tomato mixture in pan; stir to combine.
  • Step 3
    Combine "Bowl" ingredients: oil, chili powder, cumin, garlic powder, dried oregano, and salt; drizzle this over the pan goodies; stir to coat.
  • Step 4
    Bake uncovered for 20-25 minutes or until ‪‎chicken‬ is cooked through and ‎vegetables‬ are al dente. ‪
  • Step 5
    Serve with warmed tortilla wrappers.
  • Step 6
    OPTIONAL: add thinly sliced portobella 'shrooms to the veggies. Yommmm!
