one skillet chicken & vegetables

I have made this dish so many different ways. Some times I call it a Stir Fry. I have used chicken, beef, pork & even shrimp. But the vegetables are mostly the same each time. Am always trying new ways to get my family to eat more vegetables. This is another family favorite

Ingredients

  • - extra virgin olive oil
  • 1 medium onion, julienned
  • 4 medium carrots, sliced diagonal
  • 1 medium new red potatoe, 1/2 slices
  • 4 cloves button mushroom, halved
  • 1 pound broccoli crowns, bite size
  • 3 cloves garlic, sliced
  • 3 - chicken thighs, boneless skinless & cut into strips
  • 1 tablespoon fresh herbs, basil, oregano & thyme chopped
  • 3/4 cup chicken broth
  • 1/2 teaspoon salt & pepper mix

How To Make one skillet chicken & vegetables

  • Step 1
    heat large skillet over medium heat & add in a drizzle of EVOO. Saute the onion until almost translucent. The add in the carrots & potato. Stir occasionally until potatoes start to turn brown.
  • Step 2
    Add in the mushrooms broccoli & garlic. Cook until broccoli is just turning color & still is crisp. Remove vegetables from pan & set aside.
  • Step 3
    Add the chicken to the pan & cook until brown. Pour in the chicken broth & simmer until chicken is fully cooked. Stir in the veggies.
  • Step 4
    Add in the herbs & seasonings. taste to check & adjust the taste as needed.
