Ingredients
- 4 - boneless, skinless chicken breasts
- 3 - roma tomatoes
- 4 - baby portebello mushrooms
- 1 (3.8 oz. can black olives
- 1/4 cup diced sweet onion
- 3 - green olives
- 1/4 cup chicken broth
- 3 tablespoons extra virgin olive oil
- 1 teaspoon oregano
- 1 teaspoon basil
- 1/2 tea teaspoon garlic powder
How To Make mediterranean chicken

Step 1Seed and dice tomatoes. Slice mushrooms. Dice both kinds of olives small.

Step 2Heat olive oil in skillet and cook chicken until done. About 7 minutes per side. Set aside.

Step 3To oil in skillet, add onion and mushrooms. Cook stirring often for 5 minutes.

Step 4Add both kinds of olives and tomatoes. Add seasonings. Saute stirring occasionally for 5 minutes. (You can add a little more oil if needed.)

Step 5Return chicken to skillet. Saute 2 minutes.

Step 6Add broth and simmer 10 minutes or until broth cooks away.

Step 7Serve over pasta or couscous.
