I made this recipe up using what we had in the pantry. My family really liked this chicken.

Ingredients

  • 4
    boneless, skinless chicken breasts
  • 3
    roma tomatoes
  • 4
    baby portebello mushrooms
  • 1 (3.8 oz. can(s)
    black olives
  • 1/4 c
    diced sweet onion
  • 3
    green olives
  • 1/4 c
    chicken broth
  • 3 Tbsp
    extra virgin olive oil
  • 1 tsp
    oregano
  • 1 tsp
    basil
  • 1/2 tea tsp
    garlic powder

How to Make Mediterranean Chicken

Step-by-Step

  1. Seed and dice tomatoes. Slice mushrooms. Dice both kinds of olives small.
  2. Heat olive oil in skillet and cook chicken until done. About 7 minutes per side. Set aside.
  3. To oil in skillet, add onion and mushrooms. Cook stirring often for 5 minutes.
  4. Add both kinds of olives and tomatoes. Add seasonings. Saute stirring occasionally for 5 minutes. (You can add a little more oil if needed.)
  5. Return chicken to skillet. Saute 2 minutes.
  6. Add broth and simmer 10 minutes or until broth cooks away.
  7. Serve over pasta or couscous.
