I made this recipe up using what we had in the pantry. My family really liked this chicken.

boneless, skinless chicken breasts
roma tomatoes
baby portebello mushrooms
1 (3.8 oz. can(s)
black olives
1/4 c
diced sweet onion
green olives
1/4 c
chicken broth
3 Tbsp
extra virgin olive oil
1 tsp
1 tsp
1/2 tea tsp
garlic powder

How to Make Mediterranean Chicken


  • 1Seed and dice tomatoes. Slice mushrooms. Dice both kinds of olives small.
  • 2Heat olive oil in skillet and cook chicken until done. About 7 minutes per side. Set aside.
  • 3To oil in skillet, add onion and mushrooms. Cook stirring often for 5 minutes.
  • 4Add both kinds of olives and tomatoes. Add seasonings. Saute stirring occasionally for 5 minutes. (You can add a little more oil if needed.)
  • 5Return chicken to skillet. Saute 2 minutes.
  • 6Add broth and simmer 10 minutes or until broth cooks away.
  • 7Serve over pasta or couscous.
