Ingredients
- 2 cups cooked and shredded chicken
- 1 teaspoon chili powder
- 1 tablespoon garlic powder
- 1 teaspoon cumin
- 2 ounces light cream cheese
- 1 cup reduced fat shredded cheddar jack cheese
- 1 jar salsa
- 1 1/4 cups brown rice, cooked
- 8 - whole wheat flour tortillas
- 3 slices bacon cooked and crumbled
- 2 - jalapeno peppers seeded and diced
How To Make jalapeno popper mini burritos

Step 1In a large bowl combine chicken, chili powder, garlic powder, cumin, cream cheese,jalapeno peppers, half of the cheddar jack, half of the salsa and bacon. Mix well. Assemble burritos by spreading chicken mixture down the middle of the tortilla. Add in some of the brown rice. Fold burritos and place in a lightly sprayed 9x13 baking dish. Top with remaining salsa and shredded cheese. Bake at 375 for 20 minutes. Top with sour cream and green onion or cilantro if desired. Enjoy!
