This is a healthier version of chicken pot pie, I actually like the phylo crust in this better than the thicker crust of the traditional pie. Calories:298 Fat: 8.3 grams Carbs: 30 grams.

Ingredients
- 1 tablespoon olive oil, extra virgin
- 1/2 cup cauliflower florets
- 2 - carrots, chopped
- 2 - celery stalks, chopped
- 1/2 - onion, chopped
- 2 - boneless, skinless chicken breasts, cut into cubes
- 2 tablespoons flour
- 1/2 teaspoon chili powder
- 1/4 teaspoon pepper
- 1/4 teaspoon paprika
- 1-1/2 cup fat free milk
- 1 cup frozen peas
- 2 tablespoons light mayonnaise
- 1 teaspoon dijon mustard
- 4 large sheets, phylo dough, thawed if frozen
How To Make healthy chicken/phylo pie

Step 1Heat oven to 350. Spray a lg casserole dish w/ cooking spray. Heat oil in lg pot or deep skillet over med-high heat. Add cauliflower, carrots, celery and onions, cook 10 mins.

Step 2In plastic ziplock bag, add flour, chili powder, pepper and paprika. Add chicken to bag and shake to coat. Add chicken to skillet, cook 4 mins, stirring.

Step 3Add milk, bring to a boil until thickened. Add peas, mayonnaise and mustard. Simmer 10 mins, stirring often. Spoon into casserole dish. Spray each phylo sheet w/ a little cooking spray. Layer the sheets over filling in casserole dish. Bake 10 mins, or until heated through and phylo dough is light brown.
