I had a bumper crop of blackberries this year and had to get creative to use them all up. They add beautiful contrasting color to a simple chicken breast.

Ingredients

  • 2 - boneless, skinless chicken breasts
  • 1 tablespoon cooking oil
  • - salt
  • - fresh ground black pepper
  • 1/4 cup blackberry jam
  • 2 tablespoons cognac or other alcohol
  • 2 tablespoons rice vinegar
  • 1 teaspoon grated fresh ginger
  • 1 teaspoon soy sauce
  • 1/2 teaspoon kosher salt
  • 6 ounces fresh blackberries
  • 1 teaspoon minced fresh mint

How To Make grilled chicken with blackberry sweet and sour sau

  • Step 1
    Preheat grill to high heat. Brush the chicken breasts with the cooking oil and season liberally with salt and pepper. Grill 3 minutes per side, then reduce the heat on a gas grill to medium-low or move the chicken to indirect heat on a charcoal grill. Cover the grill until the chicken is cooked through, about 5 minutes.
  • Step 2
    Meanwhile, in a saucepan, over medium-high heat, add jam, cognac, vinegar, ginger, soy sauce, salt, and blackberries. Mash have the blackberries with a potato masher or fork. Reduce for about 2 minutes while stirring.
  • Step 3
    Slice chicken and transfer to a serving platter. Drizzle with the blackberry sauce and garnish with the chopped mint leaves. Pass remaining sauce at the table.
