Ingredients

  • - olive oil
  • 1/4 cup molasses, light (mild flavored)
  • 1/4 cup red wine vinegar
  • 1 tablespoon tomato paste
  • 1 tablespoon onion, finely chopped
  • 1 1/2 teaspoons fresh thyme, chopped
  • 1 large garlic clove, peeled
  • 1/2 teaspoon cayenne pepper
  • 1/2 teaspoon ground allspice
  • 4 - chicken breast halves (boneless with skin)
  • 2 - semi-ripe plantains, peeled and cut on the diagonal 1/3 - 1/2 thick (yellow-black skin)

How To Make grilled chicken and plaintains, jamaican-style

  • Step 1
    Brush grill with oil. Prepare grill to medium heat. Puree molasses and next 7 ingredients (red wine vinegar through ground allspice)in blender until smooth.
  • Step 2
    Season chicken with salt and freshly ground black pepper. Spoon 1/4 cup sauce into a pie plate. Add chicken and turn to coat. Marinate for 15 minutes. Brush plantains with oil and sprinkle with salt and pepper.
  • Step 3
    Grill plantains and chicken (skin side down), for 8 minutes. Turn chicken and plantains over and grill until chicken is cooked through - approximately 8 minutes (for chicken) and 4 minutes (for plantains).
  • Step 4
    serve chicken and plantains and drizzle wth remaining sauce.
