great chicken pumpkin chili

This is a stomack warmer on a cool halloween day.

Ingredients

  • 1 medium pie pumpkin
  • 1 pound cooked chicken cut into bite sized pieces
  • 1 1/2 cups - chopped bell pepper
  • 1 - clove, garlic minced
  • 1 1/2 - teaspoon vegetable oil
  • 1/2 - cup bottled chili sauce
  • 1 - 16oz can diced tomatoes, drained
  • 2 - 16oz can chili beans
  • 1/3 - cup water
  • 3 - tablespoons cider vinegar
  • 1/3 - cup packed light brown sugar
  • 4 1/2 - teaspoons chili powder
  • 2 - teaspoons ground cummin
  • 1 1/2 - teaspoons coriander
  • 1 1/2 - teaspoons cinnamon
  • 1 1/2 - teaspoons sweetened cocoa powder

How To Make great chicken pumpkin chili

  • Step 1
    Cut pie pumkin in half, discard seeds and pulp. Place pumpkin, cut side down on a baking sheet. Bake in a 350 degree oven for 45 minutes or until tender remove from oven and let cool till holdable
  • Step 2
    Meanwhile , cook chicken, bell pepper, onion and garlic in hot oil until chicken is brown. Add all remaining ingrediants, except pumpkin, Bring to boiling reduce heat to a simmer cook 1 hour, stirring occasionally
  • Step 3
    Cut the pumpkin reserved into 1/4 inch inch pieces oh make sure to remove the rind from the pumpkin. Add to simmering chili and cook 20 minutes. Done cool slightly and serve
