Ingredients
- 1 medium pie pumpkin
- 1 pound cooked chicken cut into bite sized pieces
- 1 1/2 cups - chopped bell pepper
- 1 - clove, garlic minced
- 1 1/2 - teaspoon vegetable oil
- 1/2 - cup bottled chili sauce
- 1 - 16oz can diced tomatoes, drained
- 2 - 16oz can chili beans
- 1/3 - cup water
- 3 - tablespoons cider vinegar
- 1/3 - cup packed light brown sugar
- 4 1/2 - teaspoons chili powder
- 2 - teaspoons ground cummin
- 1 1/2 - teaspoons coriander
- 1 1/2 - teaspoons cinnamon
- 1 1/2 - teaspoons sweetened cocoa powder
How To Make great chicken pumpkin chili

Step 1Cut pie pumkin in half, discard seeds and pulp. Place pumpkin, cut side down on a baking sheet. Bake in a 350 degree oven for 45 minutes or until tender remove from oven and let cool till holdable

Step 2Meanwhile , cook chicken, bell pepper, onion and garlic in hot oil until chicken is brown. Add all remaining ingrediants, except pumpkin, Bring to boiling reduce heat to a simmer cook 1 hour, stirring occasionally

Step 3Cut the pumpkin reserved into 1/4 inch inch pieces oh make sure to remove the rind from the pumpkin. Add to simmering chili and cook 20 minutes. Done cool slightly and serve
