Ingredients

1 medium
pie pumpkin
1 lb
cooked chicken cut into bite sized pieces
1 1/2 cups
chopped bell pepper
1
clove, garlic minced
1 1/2
teaspoon vegetable oil
1/2
cup bottled chili sauce
1
16oz can diced tomatoes, drained
2
16oz can chili beans
1/3
cup water
3
tablespoons cider vinegar
1/3
cup packed light brown sugar
4 1/2
teaspoons chili powder
2
teaspoons ground cummin
1 1/2
teaspoons coriander
1 1/2
teaspoons cinnamon
1 1/2
teaspoons sweetened cocoa powder

Step-By-Step

1Cut pie pumkin in half, discard seeds and pulp. Place pumpkin, cut side down on a baking sheet. Bake in a 350 degree oven for 45 minutes or until tender remove from oven and let cool till holdable
2Meanwhile , cook chicken, bell pepper, onion and garlic in hot oil until chicken is brown. Add all remaining ingrediants, except pumpkin, Bring to boiling reduce heat to a simmer cook 1 hour, stirring occasionally
3Cut the pumpkin reserved into 1/4 inch inch pieces oh make sure to remove the rind from the pumpkin. Add to simmering chili and cook 20 minutes. Done cool slightly and serve
