A great way to use up little bits of leftovers. This is a recipe I have been using since I was 18 and my family loves it.

Ingredients

  • 1-2 Tbsp
    oil or 1-2 tbs bacon drippings
  • 1 c
    cooked plain rice
  • 2 tsp
    soy sauce
  • 1-2
    green onions, sliced including the green tops
  • 1
    egg
  • 3 Tbsp
    cooked chicken, pork, ham, bacon, or shimp, minced
  • 1/4 - 1/2 c
    peas (optional)

How to Make Fried Rice for 2

Step-by-Step

  1. Heat oil or bacon drippings in an 8 inch skillet.
  2. Add rice and stir-fry until rice is hot and mixed with oil or drippings.
  3. Add soy sauce, mix well. If rice is dry, add 1 to 2 tablespoons water; cover and cook gently until water is absorbed.
  4. Stir in green onions. Then push the rice mixture to one side of skillet.
  5. Beat egg separately or break into skillet and quickly scramble with a fork. As egg sets, stir gently to let uncooked egg glow underneath.
  6. Stir cooked egg into rice, breaking egg into small pieces.
  7. Now stir in minced cooked meat and peas if using. Heat through and enjoy.
