fast fajita salad
A full of flavor, low fat salad, great for lunch or dinner! I sometimes add a 1/2 a can of drained black beans to add some nutritional benefit, plus extra taste.

Ingredients
- 1 tablespoon canola oil
- 2 large onions, cut into wedges
- 2 large green bell peppers, or use 1 green pepper and 1 red pepper, cut into strips
- 1 pound boneless, skinless chicken breasts, cut into strips
- 2 tablespoons dry fajita seasoning mix
- 4 cups shredded lettuce
- 1/2 cup salsa
- 1/2 cup light sour cream
How To Make fast fajita salad

Step 1In lg skillet, heat oil over med-high heat. Add onions and peppers. Saute 5 mins, stirring often.

Step 2In bowl, combine chicken and fajita seasoning, toss to coat. Add chicken to skillet, cokk 5 mins, stirring often.

Step 3Place lettuce on serving platter, top w/ chicken mix. Drizzle w/ salsa. Serve w/ sour cream.
