crunchy chicken salad
This salad was served at a friend's baby shower and it was a hit. I have served it on lettuce cups, baby croissants and with assorted crackers. Prep time does not include time for cooking chicken.

Ingredients
- 5 1/2 cups cooked chicken breast, cubed
- 3 - eggs (boiled and chopped)
- 1 cup celery, chopped
- 1 cup sweet pickle, cubed
- 1 cup pecans, toasted and chopped
- 1 cup green seedless grapes, halved (or red if you prefer)
- 1 cup mayonnaise (can use light)
- 1 can water chestnuts, (8 oz can drained and chopped)
- 1 can pineapple tidbits (8 oz can - drained and chopped)
- 1/2 cup pimento-stuffed olives, chopped
- 1 small onion, chopped (red or can use green onions)
- 1 jar pimento, drained and chopped (2 oz. jar)
- 1 tablespoon fresh lemon juice
How To Make crunchy chicken salad

Step 1Combine all ingredients in a large bowl and chill.
