This salad was served at a friend's baby shower and it was a hit. I have served it on lettuce cups, baby croissants and with assorted crackers. Prep time does not include time for cooking chicken.

Ingredients

  • 5 1/2 cups cooked chicken breast, cubed
  • 3 - eggs (boiled and chopped)
  • 1 cup celery, chopped
  • 1 cup sweet pickle, cubed
  • 1 cup pecans, toasted and chopped
  • 1 cup green seedless grapes, halved (or red if you prefer)
  • 1 cup mayonnaise (can use light)
  • 1 can water chestnuts, (8 oz can drained and chopped)
  • 1 can pineapple tidbits (8 oz can - drained and chopped)
  • 1/2 cup pimento-stuffed olives, chopped
  • 1 small onion, chopped (red or can use green onions)
  • 1 jar pimento, drained and chopped (2 oz. jar)
  • 1 tablespoon fresh lemon juice

How To Make crunchy chicken salad

  • Step 1
    Combine all ingredients in a large bowl and chill.
  • Step 2
    Serve on lettuce cups or use for sandwiches.
