Crock Pot Provencal Chicken
1bell pepper, seeded and cut into strips
1 can(s)diced tomatoes
1 can(s)cannellini beans, rinsed and drained
1 Tbspbalsamic vinegar
2 tspherbes de provence
2garlic cloves. minced
2chicken breasts, boneless and skinless
·salt and pepper
2 tspextra virgin olive oil, divided
2 ozchevre, divided
How to Make Crock Pot Provencal Chicken
- Place onion, pepper, tomatoes, beans, vinegar, herbs, and garlic in the crock pot. Stir to combine.
Season chicken breasts with a generous amount of salt and some freshly cracked black pepper. Place the chicken in the veggies and beans.
Cover and cook on LOW for 4 hours.
- Top each plate with a drizzle of olive oil and crumbled cheese.
