Ingredients
- 1 - onion, sliced
- 1 - bell pepper, seeded and cut into strips
- 1 can diced tomatoes
- 1 can cannellini beans, rinsed and drained
- 1 tablespoon balsamic vinegar
- 2 teaspoons herbes de provence
- 2 - garlic cloves. minced
- 2 - chicken breasts, boneless and skinless
- - salt and pepper
- 2 teaspoons extra virgin olive oil, divided
- 2 ounces chevre, divided
How To Make crock pot provencal chicken

Step 1Place onion, pepper, tomatoes, beans, vinegar, herbs, and garlic in the crock pot. Stir to combine. Season chicken breasts with a generous amount of salt and some freshly cracked black pepper. Place the chicken in the veggies and beans. Cover and cook on LOW for 4 hours.
