Ingredients

  • 1 - onion, sliced
  • 1 - bell pepper, seeded and cut into strips
  • 1 can diced tomatoes
  • 1 can cannellini beans, rinsed and drained
  • 1 tablespoon balsamic vinegar
  • 2 teaspoons herbes de provence
  • 2 - garlic cloves. minced
  • 2 - chicken breasts, boneless and skinless
  • - salt and pepper
  • 2 teaspoons extra virgin olive oil, divided
  • 2 ounces chevre, divided

How To Make crock pot provencal chicken

  • Step 1
    Place onion, pepper, tomatoes, beans, vinegar, herbs, and garlic in the crock pot. Stir to combine. Season chicken breasts with a generous amount of salt and some freshly cracked black pepper. Place the chicken in the veggies and beans. Cover and cook on LOW for 4 hours.
  • Step 2
    Top each plate with a drizzle of olive oil and crumbled cheese. Enjoy!
