    onion, sliced

    bell pepper, seeded and cut into strips
  • 1 can(s)
    diced tomatoes
  • 1 can(s)
    cannellini beans, rinsed and drained
  • 1 Tbsp
    balsamic vinegar
  • 2 tsp
    herbes de provence
  • 2
    garlic cloves. minced
  • 2
    chicken breasts, boneless and skinless
  • ·
    salt and pepper
  • 2 tsp
    extra virgin olive oil, divided
  • 2 oz
    chevre, divided

How to Make Crock Pot Provencal Chicken

Step-by-Step

  1. Place onion, pepper, tomatoes, beans, vinegar, herbs, and garlic in the crock pot. Stir to combine.
    Season chicken breasts with a generous amount of salt and some freshly cracked black pepper. Place the chicken in the veggies and beans.
    Cover and cook on LOW for 4 hours.
  2. Top each plate with a drizzle of olive oil and crumbled cheese.
    Enjoy!
