I love to serve this with buttered spaetzle and I sometimes add a sprinkle of paprika on top before baking.

Ingredients

1
chicken cut up
1 Tbsp
adobo powder
1 Tbsp
paprika, sweet mild
1 tsp
poultry seasoning
1
lemon juiced
2
eggs
1 c
bread crumbs
2 Tbsp
flour
1 stick
unsalted butter, melted

Step-By-Step

1Mix eggs with seasonings and lemon juice. Add chicken and turn to coat. Let rest in the refrigerator for 15 mins.
2Mix flour and bread crumbs on a plate. Coat chicken with bread crumb mixture, when done place it back in the frig to firm up while oven preheats to 350 degrees. I use a rack with baking sheet beneath.
3Coat a baking pan with half of the butter, add the chicken and pour the remaining butter over the chicken. Bake for 45-60 minutes until juices run clear.
