This crispy baked chicken is a comforting and hearty dish. It can be served with buttered spaetzle for a delicious cold-weather dinner as Patricia suggests. Or, serve with mashed potatoes and your favorite veggies. The chicken pieces have a golden brown, toasty, and crispy exterior once baked. Seasoning with Adobo powder, paprika, and poultry seasoning adds a nice flavor. Baking in butter adds even more flavor and richness. This is made with a cut-up chicken, but boneless chicken breasts or chicken thighs can be substituted too.

Ingredients
- 2 large eggs
- 1 tablespoon Adobo powder
- 1 tablespoon paprika, sweet mild
- 1 teaspoon poultry seasoning
- 1 medium lemon, juiced
- 1 chicken, cut up
- 2 tablespoons all-purpose flour
- 1 cup bread crumbs
- 1 stick unsalted butter, melted
How To Make crispy baked chicken

Step 1Mix eggs with seasonings and lemon juice.

Step 2Add chicken and turn to coat. Let rest in the refrigerator for 15 mins.

Step 3Mix flour and bread crumbs on a plate.

Step 4Coat chicken with bread crumb mixture.

Step 5When done, place it back in the fridge to firm up while the oven preheats to 350 degrees F. I use a rack with a baking sheet beneath.

Step 6Coat a baking pan with half of the butter.

Step 7Add the chicken.

Step 8Pour the remaining butter over the chicken.

Step 9Bake for 45-60 minutes until juices run clear.
