Nope, not your typical chicken salad. I made this dish with cold, leftover grilled chicken, therefore no cooking time was involved in this particular dish.

Ingredients

**chicken breasts, grilled
**tomatoes, sliced
**red onion, sliced
**lettuce pieces
**your fav cheese, sliced
**your favorite salad dressing

How to Make Cold grilled Chicken Salad

Step-by-Step

  • 1I used bone in chicken breast, then removed the bone for this dish. You of course could use boneless, but I love the addition of the skin for this.
  • 2Grill chicken as you normally would. Allow to cool, or refrigerate and use a day or two later. The colder, the easier to slice nice and neat.
  • 3Slice tomatoes, onion, cheese and tear lettuce pieces.
  • 4Assemble by layering chicken, tomato, onion, cheese, and repeat till all of chicken breast is used. I used Zesty Italian dressings as a garnish.
