This is a wonderful bowl of heaven. So satisfying, very filling, healthy, and delicious. Makes a great lunch salad. It will also be a great way to use left-over roasted turkey. This salad is good without the chocolate, but with it, it is over the top. Enjoy!

Ingredients For bonnie's chocolate chicken salad

  • 2
    cups diced chicken. we prefer deli roasted turkey breast.
  • 1
    cup seedless, green grapes,washed, cut in half, blot with paper towels
  • 1/2
    cup craisins (dried cranberries)
  • 1/2
    cup cashew nuts, unsalted, halves okay
  • 1/4
    cup pine nuts
  • 4
    teaspoons mayonnaise. i used best foods.
  • add
    coarse ground black pepper to taste
  • add
    kosher salt to taste
  • 2
    ounces (1 square) chopped almond bark chocolate

How To Make bonnie's chocolate chicken salad

    Dice roast turkey or chicken, remove any skin. Place in a medium mixing bowl.

    Wash the seedless grapes, cut in half, blot dry with paper towels and add to the bowl.

    Add the 1/2 cup of Craisins to the bowl.
  • 4
    Add the 1/2 cup of Cashew nuts to the bowl

    Add the 1/4 cup of pine nuts.
  • 6
    Add kosher salt and pepper to taste.

    Add 4 teaspoons of mayonnaise to the mixture in the bowl.

    Now for the chocolate. I use almond bark chocolate because it is lower in sugar and keeps its shape. The taste is also not overwhelming.

    Chop 2 ounces and add to the mixture in the bowl. If you have some shavings while chopping, that is okay, add them, too.

    Gently combine ingredients with a wooden spoon until well mixed. The salad should have just enough mayo to wet the ingredients and not smother it. You can always add more if you desire.

    Cook's note: I do believe you can add anything you want to this salad with no regrets. So experiment and have fun with it.
