CHICKEN VERONIQUE DISANTO
5chicken breast halves, skinless and boneless
1 ptmushrooms sliced
2 Tbspshallots minced
1/4 ccream sherry
1 cchicken stock
1 chalf and half
1 bunchgreen grapes cut crosswise
1 bunchgreen onions finely sliced
How to Make CHICKEN VERONIQUE DISANTO
- Saute chicken until done.
- Then in a sauce pan saute shallots,do not brown. Then add mushrooms,Saute for about 3 minutes and add the sherry wine, simmer for 3 minutes.
- Add chicken stock and Half & half and bring to a boil.
- then add the roux until you get the right thickness. Let cool for 10 minutes and add 1/2 the green grapes and tarragon.
- Place chicken on the plate and pour the sauce over the chicken and sprinkle the green grapes and scallions over the top for garnish.
