Ingredients
- 5 - chicken breast halves, skinless and boneless
- 1 pint mushrooms sliced
- 2 tablespoons shallots minced
- 1/4 cup cream sherry
- 1 cup chicken stock
- 1 cup half and half
- 1 bunch green grapes cut crosswise
- 1 bunch green onions finely sliced

Step 1Saute chicken until done.

Step 2Then in a sauce pan saute shallots,do not brown. Then add mushrooms,Saute for about 3 minutes and add the sherry wine, simmer for 3 minutes.

Step 3Add chicken stock and Half & half and bring to a boil.

Step 4then add the roux until you get the right thickness. Let cool for 10 minutes and add 1/2 the green grapes and tarragon.

Step 5Place chicken on the plate and pour the sauce over the chicken and sprinkle the green grapes and scallions over the top for garnish.
