Ingredients

  • 5 - chicken breast halves, skinless and boneless
  • 1 pint mushrooms sliced
  • 2 tablespoons shallots minced
  • 1/4 cup cream sherry
  • 1 cup chicken stock
  • 1 cup half and half
  • 1 bunch green grapes cut crosswise
  • 1 bunch green onions finely sliced

How To Make chicken veronique disanto

  • Step 1
    Saute chicken until done.
  • Step 2
    Then in a sauce pan saute shallots,do not brown. Then add mushrooms,Saute for about 3 minutes and add the sherry wine, simmer for 3 minutes.
  • Step 3
    Add chicken stock and Half & half and bring to a boil.
  • Step 4
    then add the roux until you get the right thickness. Let cool for 10 minutes and add 1/2 the green grapes and tarragon.
  • Step 5
    Place chicken on the plate and pour the sauce over the chicken and sprinkle the green grapes and scallions over the top for garnish.
