Ingredients

    chicken breast halves, skinless and boneless
  • 1 pt
    mushrooms sliced
  • 2 Tbsp
    shallots minced
  • 1/4 c
    cream sherry
  • 1 c
    chicken stock
  • 1 c
    half and half
  • 1 bunch
    green grapes cut crosswise
  • 1 bunch
    green onions finely sliced

How to Make CHICKEN VERONIQUE DISANTO

Step-by-Step

  1. Saute chicken until done.
  2. Then in a sauce pan saute shallots,do not brown. Then add mushrooms,Saute for about 3 minutes and add the sherry wine, simmer for 3 minutes.
  3. Add chicken stock and Half & half and bring to a boil.
  4. then add the roux until you get the right thickness. Let cool for 10 minutes and add 1/2 the green grapes and tarragon.
  5. Place chicken on the plate and pour the sauce over the chicken and sprinkle the green grapes and scallions over the top for garnish.
