chicken pot pie (candi's way!)
I was craving stuffing something fierce and the hubs wanted chicken pot pie, so, I made a chicken pot pie that tasted like stuffing topped with some delish biscuits I found online! Ingredients
- FOR THE FILLING
- 1/4 cup olive oil
- 2 cups cooked chicken (cutup)
- 1 large red potatoes chopped
- 2 medium carrots, chopped
- 1 small onion diced
- 3 large garlic diced
- 2 sticks celery chopped
- 1 teaspoon celery salt
- 1 teaspoon crushed sage
- 1/4 teaspoon thyme
- 1/2 teaspoon marjoram
- 1 teaspoon parsley flakes
- 1/2 teaspoon savory
- 1/2 teaspoon pepper
- 2 cups chicken broth
- 2 cups whole milk
- 3-4 tablespoons flour (heaping)
- 3 medium pads butter
- FOR THE BISCUITS
- 2 cups flour
- 1 tablespoon baking powder
- 1/4 teaspoon baking soda
- 1/2 teaspoon salt
- 2 teaspoons sugar
- 6 tablespoons cold butter
- 1 cup medium cheddar cheese shredded
- 1 1/4 cups buttermilk
- - black pepper
How To Make chicken pot pie (candi's way!)

Step 1Add 1st 14 ingredients to dutch oven or large heavy pot. Fry in oil stirring regularly until potatoes begin to soften a bit.

Step 2Add 2 cups chicken broth & milk, bring to simmer, add butter and allow to simmer until veggies are tender. Making biscuit dough while your filling is simmering.

Step 3In a mixing bowl, stir together the flour, baking powder, baking soda, salt and sugar. Cut in the butter using a pastry blender,fork or your fingers until the mixture is crumbly. Stir in the cheddar cheese (I used some pepper jack in this and it was wonderful!),followed by the buttermilk, until it all just comes together and forms a thick, sticky dough. preheat your oven to 425*

Step 4Once your filling is done, drop biscuit dough by tablespoon size dollops onto the top of your filling until the whole top is covered.

Step 5place whole pot into oven for 20 minutes (we are high altitude so it took mine about 25 minutes). Brush biscuit tops with butter and serve!
