How To Make chicken pot pie (candi's way!)

  • Step 1
Add 1st 14 ingredients to dutch oven or large heavy pot. Fry in oil stirring regularly until potatoes begin to soften a bit.
  • Step 2
Add 2 cups chicken broth & milk, bring to simmer, add butter and allow to simmer until veggies are tender. Making biscuit dough while your filling is simmering.
  • Step 3
In a mixing bowl, stir together the flour, baking powder, baking soda, salt and sugar. Cut in the butter using a pastry blender, fork or your fingers until the mixture is crumbly. Stir in the cheddar cheese (I used some pepper jack in this and it was wonderful!),followed by the buttermilk, until it all just comes together and forms a thick, sticky dough. preheat your oven to 425*
  • Step 4
Once your filling is done, drop biscuit dough by tablespoon size dollops onto the top of your filling until the whole top is covered.
  • Step 5
place whole pot into oven for 20 minutes (we are high altitude so it took mine about 25 minutes). Brush biscuit tops with butter and serve!
