This dish can be prepared up to putting the sauce on and frozen or refrigerated (sauce separately) for later use. Just be sure to thaw chicken well before baking. It also can be easily a low-fat / diabetic friendly dish by using low-fat cheeses and 1/2 oil and butter . Its very easy yet presents beautifully. Accompanied by a salad and garlic bread. Easy enough for family dining, special enough for company !

Ingredients

  • 4 medium chicken breasts, boneless/skinless and tenderized
  • 1 cup zesty italian dressing
  • 1 1/3 cups flour, seasoned
  • 1/3 cup parmesan cheese
  • 1-2 tablespoon dried italian seasoning
  • 1 1/2 cups buttermilk
  • 2 tablespoons butter or margarine to fry breasts
  • 2 tablespoons olive oil, to add to butter for frying
  • FOR SAUCE :
  • 1 can crushed tomatoes
  • 1 1/2 tablespoons chopped garlic (from a jar )
  • 1/2 tablespoon lemmon pepper
  • 1/2 teaspoon red pepper flakes ( or to taste )
  • 1 teaspoon dried parsley
  • 1/3 teaspoon salt
  • 1/3 cup italian dressing
  • 2 tablespoons balsamic vinegar
  • MOZZARELLA CHEESE TO MELT ON TOP

How To Make chicken parmesan

  • Step 1
    Marinade chicken breasts in Italian dressing at least 1 hour.
  • Step 2
    Combine dry ingredients ...seasoned flour , Italian seasoning, parmesan cheese.
  • Step 3
    Dip marinated chicken in dry ingredients
  • Step 4
    Dip in buttermilk to coat
  • Step 5
    Dredge again in dry ingredients ( for thicker crust repeat dipping in buttermilk and dry ingredients.
  • Step 6
    Pan fry breasts in butter and olive oil until golden,flip and brown other side... Transfer to 8x13 baking dish
  • Step 7
    In pan used for frying breasts add sauce ingredients and simmer for 10 min.
  • Step 8
    Pour sauce over chicken breasts
  • Step 9
    Bake in preheated 375*oven until breasts are cooked through (about 30 to 45 minutes depending on how thick and large the breasts are.)
  • Step 10
    Add cheese the last 15 minutes to melt on top.
