Ingredients
- 1 cup long grain rice, uncooked
- 2 tablespoons olive oil, extra virgin
- 1 1/2 - skinless and boneless chicken breasts
- 2 teaspoons curry power
- 1 medium cooking yellow onion cut in 1/4 inch pieces
- 3/4 cup white wine or chicken stock
- 2 cloves finely chopped
- 1 tablespoon grated ginger
- 1 small green sweet pepper cut into matchstick pieces1
- 1 pint grape tomatoes cut in half
- 3/4 cup frozen peas, thawed
How To Make chicken curry with tomatoes and peas

Step 1Cook rice according to package directions set aside. Heat 1 tbsp oil in skillet over medium heat,,season the chicken with the curry powder {cut the chicken into 2 inch pieces}..cook chicken for 3 to 4 minutes. transfer to a bowl.

Step 2Add the wine to skillet and cook scraping up any brown bits., transfer to bowl with chicken.

Step 3Wipe out the skillet heat the remaining oil add the onion, green pepper and garlic and cook 5 minutes, return the chicken and wine to skillet and add the tomatoes and peas and cook until heated through...Serve over rice.
