chicken curry with tomatoes and peas

I like making stir fried vegetables and chicken and alter the seasoning every time and this is one which is tasty.

Ingredients For chicken curry with tomatoes and peas

  • 1 c
    long grain rice, uncooked
  • 2 Tbsp
    olive oil, extra virgin
  • 1 1/2
    skinless and boneless chicken breasts
  • 2 tsp
    curry power
  • 1 md
    cooking yellow onion cut in 1/4 inch pieces
  • 3/4 c
    white wine or chicken stock
  • 2 clove
    finely chopped
  • 1 Tbsp
    grated ginger
  • 1 sm
    green sweet pepper cut into matchstick pieces1
  • 1 pt
    grape tomatoes cut in half
  • 3/4 c
    frozen peas, thawed

How To Make chicken curry with tomatoes and peas

    Cook rice according to package directions set aside. Heat 1 tbsp oil in skillet over medium heat,,season the chicken with the curry powder {cut the chicken into 2 inch pieces}..cook chicken for 3 to 4 minutes. transfer to a bowl.

    Add the wine to skillet and cook scraping up any brown bits., transfer to bowl with chicken.

    Wipe out the skillet heat the remaining oil add the onion, green pepper and garlic and cook 5 minutes, return the chicken and wine to skillet and add the tomatoes and peas and cook until heated through...Serve over rice.
