I like making stir fried vegetables and chicken and alter the seasoning every time and this is one which is tasty.

1 c
long grain rice, uncooked
2 Tbsp
olive oil, extra virgin
1 1/2
skinless and boneless chicken breasts
2 tsp
curry power
1 medium
cooking yellow onion cut in 1/4 inch pieces
3/4 c
white wine or chicken stock
2 clove
finely chopped
1 Tbsp
grated ginger
1 small
green sweet pepper cut into matchstick pieces1
1 pt
grape tomatoes cut in half
3/4 c
frozen peas, thawed

How to Make Chicken Curry with Tomatoes and Peas


  • 1Cook rice according to package directions set aside. Heat 1 tbsp oil in skillet over medium heat,,season the chicken with the curry powder {cut the chicken into 2 inch pieces}..cook chicken for 3 to 4 minutes. transfer to a bowl.
  • 2Add the wine to skillet and cook scraping up any brown bits., transfer to bowl with chicken.
  • 3Wipe out the skillet heat the remaining oil add the onion, green pepper and garlic and cook 5 minutes, return the chicken and wine to skillet and add the tomatoes and peas and cook until heated through...Serve over rice.
